The eggs are extracted from sea urchins that are harvested in clear waters rich in posidonia. Subjecting sea urchin eggs to moderate heat treatment results in a product that preserves the original taste and achieves excellent shelf life.

Sea urchins and mullet eggs

The proper combination of sea urchin eggs with mullet roe (Mugil Cephalus), followed by thermal processing, has resulted in a delectable product suitable for spreading on crostini or as a pasta sauce.

Sauté the garlic in olive oil, toss the pasta with it, and then add (as if it were cheese) the sea urchin eggs and mullet roe.
